		<description>I *adore* oysters!  Fresh-shucked, raw on the half-shell is best.  Local local local is key, too.  On the East Coast, shoot for PEI oysters.  On the Left Coast, shoot for BC or Washington (Hamma Hamma).  I&#039;ve got a cousin that raises his own oysters off his dock -- always a treat.
Eat them straight, with a little fresh lemon, or even tabasco sauce.  One seafood bar in the Olympia, WA area was great -- a trough right on the backside of the bar/counter to throw all your shells in as you go.
Lightly pan-fried oysters are ok, too -- they make a great &quot;seawitch&quot; (sandwich) with a kaiser bun.
I&#039;ve recently become Vegan, but haven&#039;t yet come to terms with how to handle my love for oysters.  We&#039;ll see if that&#039;s my one exception or not, eh?
